No Bake Chewy Protein Granola Bars


These protein packed chewy granola bars are one of my favorite snacks! They are the perfectly balanced treat, pre workout snack, or even on the go breakfast! The best part is…They are ready in about 15 minutes and don’t require any baking! These are one chocolate peanut butter treat that are so simple they are hard to beat!


The estimated total time to make this recipe is 15-20 minutes!

1. Spray a 9×13 inch baking dish with nonstick cooking spray. Combine the puffed rice, oats, protein powder (or additional oats), sweetener, and salt in a large mixing bowl.

2. Microwave honey and peanut butter in a small bowl for 30 seconds, until peanut butter is melted and smooth.

3. Pour the peanut butter mixture over the puffed rice and oats, along with the applesauce. Stir until evenly combined (if cool enough to handle, it helps to use your hands). Stir in chocolate chips. Press the mixture into the prepared pan. Gently press some of the chocolate chips into the top of the bars. Chill the bars in the refrigerator for at least 30 minutes or until firm. Cut into 16 bars. Store in the refrigerator for up to a week.


2 cups Puffed rice cereal (or gluten free rice crispies)
2 cups Old fashioned oats
1/2 cup Vanilla protein powder (or additional oats)
1/4 cup Stevia baking blend (or 1/2 cup sweetener that measures like sugar)
1/4 tsp Salt
1/4 cup Honey
1/2 cup Peanut butter
1/2 cup Unsweetened applesauce
1/4 cup Mini or Dark chocolate chips (or cocoa nibs)
