Chicken Tortilla Crockpot Soup


To Make the Soup: Place everything for the soup in your crockpot and cook on high heat for 4 hours or on low for 12 hours. After cooking, remove the chicken breasts from the crockpot and shred with two forks. Place chicken back in crockpot and stir to combine. Enjoy!

To Make the Tortilla Strips: Preheat oven to 400 degrees. Line a baking pan with foil or parchment paper. Cut the tortillas into strips using a sharp knife or pizza cutter. Lay tortilla strips on baking pan (be careful not to overlap, you can use 2 baking pans if needed), and spray tortilla strips with cooking spray. Sprinkle seasoning evenly over tortilla strips. Bake for Bake for about 5 – 7 minutes, or until tortilla strips are crisp and they turn lightly brown. Once completely cooled, store in a sealed container. Add to soup just before serving. Ingredients:

1 lb Chicken breasts (about 3 medium breasts, I used frozen)
2 (10 oz) cans Diced tomatoes with green chiles
1 cup Corn (I used canned)
1 (14.5 oz) can Black beans, drained and rinsed
1 medium Onion, diced
1 tbs Honey
1 tbs Lime juice
1 tsp Garlic, minced (or 1/2 tsp garlic powder)
1 tsp Chili powder
2 tsp Taco seasoning 1
2 cups Chicken broth (I used 2 bullion cubes and 2 cups water)
Optional Baked Tortillas:
2 Low carb/high fiber tortillas
1/2 tsp Chili powder (or paprika)
1/2 tsp Garlic powder
1/2 tsp Salt
1/4 tsp Pepper

1 Or you can make your own taco seasoning by mixing together 1/2 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon salt. Be sure seasoning is gluten free if sensitive. Nutrition Breakdown:
